Richard Gomez shares binagoongan recipe, recalls fond memories of grandmother

Actor, athlete and Ormoc mayor Richard Gomez credits his Lola Lydia for teaching him how to cook.

He shared the recipe of one of her signature dishes--pork binagoongan on an episode of Goma at Home, which he shared on his YouTube channel.

"This is one of my lola's memorable dishes. I like it because of the experience that I've had with my lola," he says at the beginning of the video.

Richard cooked the dish in the beautiful outdoor kitchen of his home on Ormoc.

Here's the recipe he shared.

Ingredients
1 kilo of pork belly, cut into cubes
1 cup of vinegar
1 tablespoon of whole peppercorns
2 to 3 pieces of bay leaves
3 heads of garlic
water
1 white onion, chopped
6 to 7 tomatoes, diced
2 cups of bagoong alamang

Procedure
1. In a pot, place the pork with 1 cup vinegar, 1 tablespoon of whole peppercorns, 2 heads of crushed garlic and a little water. Let it boil for 45 minutes or until the meat is tender.
2. In a separate pan, saute the white onion.
3. When the onion is translucent, add the diced tomatoes.
4. Add finely 1 head of finely chopped garlic.
5. When tomatoes are cooked, add the bagoong alamang.
6. Add a little water or fish stock and cook well.
7. Add the sauteed bagoong to the boiling pork and let it simmer.
8. Serve with rice and boiled vegetables.
