These days people throw around words like "artisanal" and "authentic" without really meaning what they say. "Artisanal" often pertains to being made by hand, a process that means giving special attention and care to creating a product. "Authentic" means something is made to be just like the original, or following a process by which things were first created. Surprisingly, these two words best describe one bakery in Quezon City that’s creating- not surprisingly, some delicious treats!
The Kamuning Bakery is Metro Manila's original artisanal and pugon-style bakery. It was established in 1939 in Barangay Kamuning of Quezon City. New owner and multi-awarded writer Wilson Lee Flores shares the story behind this 75-year old establishment. He relates, “The founders then were invited to open this new city's first bakery by the late pre-war media tycoon Don Alejandro Roces, who was a close ally of Quezon City's founder President Manuel Quezon.” These days Flores is helping continue the tradition of this pioneer bakery.
Drop by for a visit and you will end up staying long to taste the Kamuning Bakery’s specialties which include the pan de suelo, pandesal, and pan de coco. They also offer traditional biscuits like biscocho and wide varieties of cakes from the scrumptious yema cake, Brazo de Mercedes, and pianono. There are also more contemporary offerings like birthday cakes to the popular blueberry cheesecake.
What makes the offering from Kamuning Bakery unique is that they still use the old pugon or wood-fire brick oven. As Flores explains, it's a policy of old-style baking that does not use preservatives or additives. The establishment is different also for baking many traditional breads, cakes and biscuits of the Philippines' past, thus upholding intangible national heritage.
Though a pioneer and upholder of traditional methods and recipes, the Kamuning Bakery also keeps up with modern times. One way is through innovation and trying new and surprisingly sweet ingredients. As Flores shares they have tried using the new offering from another standard name in spreads, Cheez Whiz.
