Midnight Express: Exploring an ‘old’ Chinese soup and a fresh take on typical tapa


Saksi's Midnight Express featured on Wednesday and Thursday an old Chinese recipe and a new twist to a perennial Pinoy favorite breakfast food. 
 
100-year-old Chinese soup 'hototay' 
 
 
Looking for a new soup to warm yourself this rainy season? Try this hundred year old Chinese recipe called hototay, which means "good from the start until the last drop of the soup" in Cantonese.
 
Hototay originated from Guangzhou, the capital of Guangdong, which is the largest province in south China. The Chinese usually serve this soup as an appetizer during celebrations. 
 
It is believed that the Chinese businessmen in olden times brought hototay to the Philippines. 
 
According to Darwin Ngo, owner of restaurant Lutong Macau, which serves hototay in Makati, the soup contains seafood, shrimps, scallops, squid, chicken, sea cucumber, mushroom, and assorted vegetables. Sounds good, right? 
 
What did host Mikael Daez thinks of the soup?

"Na-retain ng bawat sangkap ang kani-kanilang mga lasa so 'pag kinain mo sabay-sabay ang dami mong malalasahan," he said. 
 
Strawberry beef tapa, an exciting change to the classic Pinoy fave
 
 
Pinoys usually eat their beef tapa with egg or itlog—hence, the birth of tapsilog. But this Filipino chef wants to try something new: drizzling strawberry sauce all over a classic Pinoy agahan. 
 
Chef Anton Amoncio, owner of Antojos Restaurante in San Juan City, said that the Filipinos have many versions of cooking tapa. But, he said, "I want to make my own mark through my creations. Mahilig ako sa strawberries ng Baguio eh."

Now, he's serving strawberry beef tapa in his restaurant! 
 
The chef makes strawberry puree, add flavoring, and pour it over cooked beef tapa! It's that simple: you now have a new twist to a typical Filipino dish. 
 
Daez said that the strawberry sauce adds a sweet and our taste to beef tapa.
