Andi Eigenmann shares healthy 'smash cake' recipe with yoghurt frosting


Andi Eigenmann threw a waste-free birthday celebration for her youngest child Lilo, and one of the most amazing things about it was the super healthy and delicious cake.

In a behind-the-scenes vlog posted her YouTube channel, Andi revealed how she made a two-layer "smash cake" with just bananas, yoghurt and a few other ingredients at home.

Of course, the video featured the adorable birthday celebrant Lilo and her ate Ellie, who made a fantastic baking assistant.

1. First, take a large bowl and mix the following ingredients together

  • Bananas (sliced)
  • Liquid sweetener (2 tbsp)
  • Peanut butter (2 tbsp)
  • Yoghurt (1 cup)
  • Vanilla (1 tsp)

2. Pour the mixture into a blender and blend until it's nice and smooth.

3. Next, fold in the following dry ingredients:

  • Flour (3 cups)
  • Baking powder (1/2 tsp)
  • Unsweetened cocoa powder

4. Grease two baking pans with a little bit of oil before pouring in the mixture and sticking them in the oven.

5. Once the cakes are done, cut the cakes into even round shapes.

6. Instead of coating the cake with regular buttercream, Andi made frosting from yoghurt. Here's the recipe:

  • Yoghurt (2 cups)
  • Powdered sugar (1 cup)
  • Vanilla extract (1 tsp)

7. Stack the cake and decorate!

Instead of using food coloring, Andi just used the frosting's natural white color to coat the cake.

The finished product looked absolutely elegant and delicious, especially when Lilo dug into it during her at-home birthday photoshoot.
