Michelin chef Fernando Alcalá leads new restaurant Singular Manila
Spanish chef Fernando Alcalá, who started Michelin-recognized KAVA in Marbella, is deepening his presence in the Philippines as he leads modern fine dining concept restaurant Singular Manila at the Bonifacio Global City in Taguig.
Alcalá was named Cocinero Revelación or Best New Chef at Madrid Fusión in 2019. He started KAVA which earned a Big Gourmand distinction from the Michelin Guide in 2020 and was awarded one Repsol Sun in 2021.
He was also featured as one of Spain’s Young Talents of Gastronomy by the Basque Culinary Center, and won Best Cheesecake in Spain in 2019.
“Singular is our way of honoring Spanish cuisine while presenting it in a contemporary and elevated way. We look forward to welcoming guests and creating an experience that is both refined and warm,” he said.
Alcalá’s cooking reflects his heritage from the South with its acidity and flavors of the sea, and his travels that are seen through fermentation, and Asian inflections.
“Singular is our way of gathering those memories around a table,” the restaurant, which made its grand launch last Thursday, February 26, said on its website.
“Each dish tells a story of where we come from: flavors that anyone who knows Spain will recognize, yet transformed—lighter, cleaner, shaped by years of cooking and reflection rather than habit.
