Healthy recipes featuring flavorful ginger

Ginger, locally known as luya, is one of the oldest known ingredients used in cooking. Because it brings hot and fragrant aroma to dishes, it has become a key ingredient in many Asian cuisines, used in curries and condiments.
 
In the Philippines, ginger is the primary ingredient of a tea called salabat – a tasty drink that helps soothe sore throat and, according to older folks, produces a better singing voice. Ginger is also a common ingredient in popular Filipino dishes like chicken tinola and arroz caldo.
 
In a recent episode of “Good News,” Chef MJ Nicasio of Apicius Culinary Arts shared three recipes that showcase the unique and rich flavor of ginger.
 
Appetizer
Gingered Carrot and Nuts spread
 
Ingredients:
Olive oil
2 carrots, chopped
½ cup of nuts
2 onions, chopped
1 garlic, chopped
2 gingers, chopped
1 tbsp. of lemon juice
1 cup of yogurt
 
Directions:
Saute onion, garlic and ginger. Add in the carrots. Combine the mixture in a food processor and process until the consistency of a mash is reached. Add yogurt and nuts. Blend the mixture again. Add lemon juice for extra flavor. Serve with bread slices.
 
Cost: Php 80/ 3 persons
 
 
Main course
Cantonese Steamed Chicken
 
Ingredients:
800 g assorted chicken pieces, bone-in 
4-5 pcs. mushrooms
¼ teaspoon salt
¼ teaspoon pepper
1 ginger, sliced
1 onion, diced
1 cup rice wine
1 ½ tbsps. soy sauce
1 ½ tbsps. cornstarch
 
Directions:
Place chicken pieces in a bowl and add rice wine, garlic, cornstarch, salt, pepper and ginger. Allow to marinate while bringing water to a boil for steaming.
 
Before steaming, place chicken in a separate bowl. Pour the marinade over so that it covers most of the chicken parts. Add mushrooms and soy sauce. Steam the chicken over boiling water for 15 to 20 minutes or when the pieces are tender. Serve over rice.
 
Cost: Php 230/ 5-6 persons
 
Dessert
Camote-Ginger Pie
 
Ingredients:
3 sweet potatoes (camote), boiled and cut into cubes
1 ginger, chopped
1 ¾ cups graham crackers, finely ground
¾ cup brown sugar
3 tbsps. butter
1 tsp. cinnamon, ground
1 tsp. lemon juice
1 cup evaporated milk
1 tsp. vanilla syrup
 
Directions:
For the pie crust, combine the graham crumbs, ginger and brown sugar in a food processor. Process thoroughly until well combined. In a heated pan, melt butter. Combine the mixture with the melted butter and mix until the crumbs are evenly moistened. Set aside.
 
To make the puree filling, place sweet potatoes, cinnamon powder, lemon juice, evaporated milk and sugar in the processor. Blend until well-combined.
 
Press the pie firmly and evenly on the bottom and sides of a baking pan to create a crust. Pour the filling into the crust and bake in the oven for about 15 minutes. Allow the pie to cool completely before slicing. Serve.
