If you’re craving for something sweet and healthy, don’t look any further. Reach for pineapples!

This spiky fruit has a lot more to it than meets the eye. The pineapple is one of the tastiest fruits around, and contains much less caloric value than any other processed dessert. Plus, it’s a good source of fiber, and vitamins A and C, which both act as antioxidants.

What this fruit is most known for, however, is its rich bromelain content – a combination of digestive enzymes and proteins that prevent infection and inflammation in the body.

Pineapple Meatloaf Melt



Ingredients:
2 tbsps. oil
4 tbsps. oyster sauce
Cheese, grated
4 to 6 pcs. meatloaf, sliced
6 to 8 pcs. pineapple, cut into round shapes

Directions:

Spread oyster sauce over a meatloaf slice, then sprinkle with grated cheese. Sandwich the meatloaf with two pineapple slices. Fry each piece for a few minutes, or until pineapple slices turn brown and the cheese melts. Serve.

Cost: P 90 serves 2 to 3 persons

Macaroon-crusted Pineapple



Ingredients:
½ cup condensed milk
2 to 3 tbsps. crushed biscuits
2 to 3 tbsps. crushed nuts
3 to 4 tbsps. desiccated coconut
Pineapple

Directions:

Trim the pineapple’s core - this is where the macaroon mixture will be placed.

To make the macaroon mixture, combine desiccated coconut, crushed biscuits and crushed nuts in a bowl. While mixing the ingredients, pour condensed milk.

Pour the mixture into the empty pineapple core and bake until just set, about 10 to 15 minutes. Set aside to cool, then refrigerate until chilled. Serve.

Cost: P100 serves 3 to 4 persons

Spicy Pineapple Maki



Ingredients:
1 cup rice
3 to 4 pcs. chili
Tempura flakes
1 pc. pineapple block, core removed

Directions:

Mix rice and chili thoroughly. Press mixture firmly inside the pineapple block. Using a knife, cut the block into slices, about ¾” thick. Place on a plate and sprinkle with tempura flakes.

Cost: P90 serves 3 to 4 persons
