Healthy Recipes for People with Fatty Liver Disease

By Patricia Isabella Romarate

Nowadays, busy people resort to fast food to accommodate mealtime in their tight schedule. However, an unhealthy eating habit is one of the leading causes of fatty liver disease. That's why it is still important that we take healthy nourishment for our own sake.

According to Healthline, fatty liver disease is “also known as hepatic steatosis. It happens when fat builds up in the liver. Having small amounts of fat in your liver is normal, but too much can become a health problem. Too much fat in your liver can cause liver inflammation, which can damage your liver and create scarring. In severe cases, this scarring can lead to liver failure.”

Good thing, there is a way to enjoy eating without worrying about having this disease.

Pinoy MD introduced two liver-friendly (and budget-friendly!) recipes by Chef Zhe Jacinto.

Sardine Stuffed Avocado

Ingredients:

  • 2 avocados
  • 1 red onion
  • 1 tsp. of turmeric powder
  • 2 canned sardines
  • 2 tbsp. of yoghurt
  • 1 tsp. of salt

First, scrape off the avocado flesh or meat and mush it in a bowl. Afterward, drop a little amount of lemon to prevent the mushed avocados from turning brown. Next, put in the diced onion and a pinch of turmeric powder. As for the sardines, make sure to remove the fish bones before mixing it along with the other ingredients. Then, add the 2 tbsp. of yogurt and 1 tsp. of salt. Finally, just mix everything properly and voila! You may now enjoy your Sardine Stuffed Avocado.

Chicken and Brown Rice Casserole

Ingredients:

  • ½ kilo brown rice
  • 4-6 pieces of chicken breast
  • 1 carrot
  • 1 red bell pepper
  • 2 cups of green peas
  • 1 tsp. of salt
  • 1 tsp. of pepper
  • 1 tbsp. of olive oil

Before starting, wash and soak the brown rice for an hour. After, put it in the casserole. Place the chicken breasts on top of the brown rice and leave it there while you add the other ingredients. Next, put in the diced carrots, sliced bell pepper, and green peas. To add flavor, season it with one tsp. of salt, one tsp. of pepper, and one tbsp. of olive oil. Lastly, pour a bowl of water and cook the casserole for 30 minutes. Now, there you have it! For only PhP376.00, the Chicken and Brown Rice Casserole is already good for 4 people.
