Midnight Express: Versions of ginataan and ratatouille
In the culinary world, recreating a dish makes food tasting more exciting. Mikael Daez got to taste a different version of a favorite merienda and a traditional French vegetable stew for Saksi's Midnight Express.
A taste of Pampanga's ginataan sinantan
Merienda-favorite ginataan commonly includes bananas, sweet potatoes, sago, sticky rice balls, and coconut milk. Add coconut flesh and inangit or glutinous rice then you'll have Pampanga's sinantan or sampelot ating inangit.
Matam-Ih Authentic Kapampangan Restaurant's general manager Antonio Rodriguez III explained, "Yung inangit po kasi ay famous sa Pampanga, so marami tayong dessert na sini-serve with inangit."
Daez said that sinantan is not really different from the other ginataan. It's just the ingredients that differ.
A Pinoy chef's take on French dish ratatouille
You don't need to go to France to get a taste of the Disney-featured Provencal vegetable stew. A Filipino chef made his own version and added shrimps and shrimp paste to make it more flavorful.
Originally, ratatouille's ingredients include tomatoes, zucchinis, bell peppers, marjoram, and basil.
Chef Jam Melchor took a cue from pinakbet and used squash, string beans, eggplants, ampalaya or bitter melon, and okra.
