Midnight Express: Filipino versions of ice cream sandwich and caviar
After exploring Angono, Rizal's culinary arts, Midnight Express went back to the metro to look for version of different dishes such as the ice cream sandwich and caviar.
Ice cream between piaya
Ice cream sandwich is a staple on a sweet tooth's list of favorite things. It is usually ice cream sandwiched between slices of bread or wafers.
But a restaurant in Taguig City called Sarsa, elevated the usual ice cream sandwich presentation. Instead os using pandesal, bread, or wafers, it used a Negros Occidental delicacy: piaya.
Piaya is a flat bread with fillings made from glucose syrup and muscovado sugar or molasses.
Sarsa serves the Filipino delicacy with vanilla ice cream, turning it into a delectable dessert.
Philippine caviar 'bihud'
Caviar is often associated with the elite, given its price tag. In fact, his salt-cured fish eggs have been an exclusive delicacy for the British Royal family for a hundred years, ever since Edward II declared the sturgeon, the only source of caviar, a Royal Fish. Hence, all sturgeons found in the waters surrounding the British Isles were property of the monarch of the United Kingdom.
For Filipinos who want to get a taste of caviar at a reasonable cost, try bihud or puga from Cavite.
The Philippine caviar bihud is the fully-riped egg masses from the ovaries of fish and other marine animals, also known as roe.
XO 46 Heritage Bistro, a restaurant in Makati City, serves bihud sauteed with garlic and onions as a dip for breads.
"Nararamdaman talaga ng dila ko 'yung eggs. 'Yung fishiness niya, I guess lansa 'yun in Tagalog, very distinct 'yung lasa niya eh," host Mikael Daez said after the taste test. — Trisha Macas/VC, GMA News
