For the love of all things baked

A snake-like queue was already forming at the perimeter of the World Trade Center by the time the 2015 Bakery Fair formally opened its doors to the public last January 30.
As the Philippine’s biggest trade show in the baking and food service industry, the three-day event features exhibitors, seminars and demonstrations by local and international experts; every baking supply and equipment is showcased, even the proverbial kitchen sink.
Although rice remains as the country’s main staple, there is a growing movement towards breads and pastries.
“In the Bakery Fair, we present the innovations in terms of equipment, processes and concepts. We seek to show the world that the Filipino baking industry is taking off,” said the Filipino Chinese Bakery Association Inc. (FCBAI) president. who requested that his name be withheld.

Indeed, the baking industry has come a long way from the days of local, independent bakeries and panderias when FCBAI was founded in 1966 to the current artisanal and unique breads that are being introduced to the Filipino palate.

Bread is certainly a part of every Filipino’s DNA. One can easily remember growing up to using the ordinary white tasty bread to make sandwiches and snacks. As one’s taste buds and health considerations mature, certain varieties like whole wheat, sugar-free, rye and sour dough have become more common and available to Pinoys.
Unlike the yearly motor or mega-supermarket chain exhibitions that I have visited in the past, the 2015 Bakery Fair is fairly organized. Not a lot of loud noises, and certainly no skimpy-dressed models manning the exhibit booths.
Despite the large foot print of the World Trade Center, one can easily mingle and network with established supply and equipment partners, who even have special deals and discounts for those aspiring to the the next Cake Boss, TLC’s Buddy Valastro.
As an added treat to the public, the event also features the finals of the Bakers Cup, a two-category event pitting the best of the best in steamed bun making and chocolate showpiece decoration. — VC, GMA News
