Top Filipino, Spanish chefs kick off first-ever Madrid Fusión Manila

The much-awaited culinary event Madrid Fusión Manila where top chefs from Spain and Philippines are expected to share their gastronomic know-how has kicked off on Friday at the SMX Convention Center in Pasay City.
In his opening remarks, Tourism Sec. Ramon Jimenez said that Madrid Fusión Manila is all about having an "appetite."
"I come here with a good appetite. But not just an ordinary appetite... an appetite to learn more, an appetite for knowledge. This is what Madrid Fusión is all about," he said in his opening remarks.

The three-day event features simultaneous programs including a trade exhibit featuring both Filipino and Spanish ingredients and products, food tastings and seminars, and most importantly a Congress where Michelin-starred Spanish chefs and celebrated Filipino and Asian chefs talk about culinary styles and more.


The International Gastronomy Congress is where Spanish, Filipino, and other Asian chefs take the stage to share their knowledge in the culinary field.
Some of the topics that will be discussed are the "thousand faces of rice" by Spanish Chef Quique Dacosta, sour fruits as base ingredient in the Philippines by Chef Fernando Aracama, the many uses of coconut in cooking by Chef Myrna Segismundo, the Philippine adobo by Chef Claude Tayag, textures of olive oil by Spanish Chef Paco Roncero, and more.

According to event director Verna Covar-Buensuceso of the Department of Tourism, there are 1,008 chefs, culinary practitioners, students, and other delegates who signed up for Madrid Fusión Manila. They are from 15 various countries like Afghanistan, Australia, Belgium, China, Denmark, Nepal, Pitcairn Islands, and United States.
