This new BGC noodle joint specializes in deliciously creamy Hokkaido-style ramen


Very few things can give comfort like a bowl piping hot ramen on a rainy day. And in time for the rainy season, Shiroi Daichi opens its doors in BGC.

Shiroi Daichi, which means "white earth," specializes in Hokkaido-style ramen, which is like regular ramen except it has a miso broth that is both creamy and earthy. 

Shiroi Daichi's COO and Executive Chef James Torres shares his grandfather, Mr. Feliciano L. Torres, fell in love with Hokkaido-style ramen while on a trip to the Japanese province. The younger Torres thought he'd open a ramen joint that would specialize in what his lolo enjoyed.

Together with his team, James went to Hokkaido's capital Sapporo to train under Takashi Nishiyama, the son of the creator of the famed ramen. And to preserve its authenticity, all Shiroi Daishi's ingredients are shipped regularly from Japan.

Shiroi Daichi serves a curated menu of Hokkaido-style ramen and Japanese staples. Diners can customize each bowl, from the broth to additional toppings. First, you choose between two kinds of ramen: Meat or Vegetable. Next, choose from three kinds of broths: their signature Miso, Spicy Miso, Shio (salt), and Shoyu (soy sauce).
