It’s the beginning that came after the end.
Prologue is the newly opened restaurant in Quezon City from the people behind the French-Japanese inspired fine dining bistro Epilogue.
It officially opened its doors to the public on July 28, roughly two years after it was first conceptualized.
While it's a lot more accessible than its older sister restaurant, Prologue took longer to come to fruition simply because the process was a bit more complicated. Its location along Sct. Gandia was tricky and finding the right fixtures and furniture to fit their vision was a challenge.
Their fix? Build everything from scratch. From the salvaged wood used sparingly in its interiors to give it a rustic look to the intricate metal chandeliers at the main dining hall with edison bulbs to achieve that industrial feel to the tables made from reclaimed wood, Prologue is literally a place that’s one of a kind.
And if they make their furniture and decor from scratch, you can only imagine the dedication they put towards their food.
According to Alyanna Uy, a full-time financial adviser who oversees the family business, “Our food here is made from scratch as well... Our fresh pasta and pizza dough are made here. Chef (Hiroyuki) Meno cures our own pancetta on our premises, he makes his own sausages, and all our sauces are made in-house, showing Chef Meno’s classic French training.
The dedication of their culinary team stems from the Japanese concept of “Kodawari,” the uncompromising pursuit of perfection and excellence.
