This Eastwood restaurant gives tortang talong a twist by adding seafood and serving it with aligue sauce
Love Añover on the "This is Eat" segment of "Unang Hirit" Tuesday, introduced us to the impressive Seafood Tortang Talong with Aligue Sauce that Blackbeard Seafood Island restaurant in Eastwood, QC serves.
While it sounds super extra — and extra difficult to make — Blackbird chef Philip De Vera shared just how easy it was to make.
Saute some minced garlic, onion, carrots, bell pepper, and shrimp until cooked.
Remove from the pan to make way for the eggplant and scrambled eggs.
Chef De Vera advised grilling the eggplant first before mixing it with the scrambled eggs for that "smoky" effect.
Once the eggplant is grilled, just dunk it into the uncooked scrambled eggs before putting it in the heated pan. Cook it as though you were cooking an omelet — this is what will set this dish apart.
Add the sauteed mixture of shrimps, garlic, onion, carrots, and bell pepper you set aside earlier. And serve the aligue sauce on the side, to complete the experience.
