Japanese Ambassador Koshikawa cooks sinigang with sake and mirin

Ambassador of Japan to the Philippines H.E. Kazuhiko Koshikawa cooked sinigang sa kamias with a Japanese touch.

In a video shared on Facebook, the ambassador showed how he prepared the well-loved Filipino dish.

His main ingredients included onions, tomatoes, shrimp, gabi, kangkong, and kamias, which he picked from his own garden.

For his special ingredients, he added salt water, mirin, sake, and soy sauce.

Mirin is a mildly sweet and syrupy Japanese rice wine, while sake is a Japanese alcoholic beverage made from fermented rice.

He also advised soaking the kangkong in ice water after cooking to keep its vibrant green color.

After plating the dish he proudly made, the ambassador enjoyed his warm bowl of sinigang.

Earlier, sinigang made it to TasteAtlas' 100 Best Dishes in the World.
