Award-winning Dubai chef reimagines Filipino cuisine in collaboration with San Juan resto

Guevarra’s by Chef Laudico and award-winning Chef David Jezreel Lizardo Pamplona, known as Chef Dabo, teamed up for another chapter of “Taste of the Philippines: A Global Culinary Journey.”

Through the partnership, Chef Dabo showcased the distinct Filipino and Pan-Asian flavors, bringing his expertise from Dubai to Manila and reinforcing the vision of elevating Filipino cuisine to the world stage.

Chef Dabo, the managing director, head chef, and co-founder of Naimas Café & Bistro in Dubai, brings a wealth of 13 years of culinary experience, characterized by his innovative approach and commitment to quality.

“I mixed fine-dining techniques with authentic Filipino flavors. Diners in Dubai love something new if it’s done well, and that’s where Filipino cuisine can shine, especially when it’s honest, rooted, and executed with heart,” he said.

For a limited time, guests at Guevarra’s by Chef Laudico can experience a curated menu that embodies Chef Dabo’s culinary philosophy, honoring heritage while embracing international influences.

The special offering features signature creations that reimagine select Filipino staples using refined techniques and cross-cultural inspiration, which includes Humba-Rum Chicken Empanada, Tiyula Itum Inasal Yakitori, Bistek Saltado, and Shrimp Laing Rebosado with Coconut Wasabi Cream.

Chef Jackie Laudico said that working with a Filipino chef based in the Middle East "brings a unique perspective, especially since the region has one of the largest overseas Filipino communities."

"His food reflects his global journey, an experience shared by many Filipino chefs abroad," he added.

The unique dishes from the Guevarra’s x Chef Dabo partnership are available as part of Guevarra’s buffet selection.
