Recipes for healthy langka dishes by Chef MJ Nicasio
Langka has always been a preferred alternative for meat-based recipes. This fruit is rich in dietary fiber and vitamin C. Other nutrients jackfruit provides are potassium, magnesium, manganese, and iron.
With the help of Chef MJ Nicasio of Business Culinary, “Good News” presents these healthy and affordable langka recipes.
To start these recipes, make sure you have boiled sliced langkas ready. You can boil langka following these easy steps:
1. Slice the raw langka into small pieces
2. Bring a pot of water to boil
3. Pour the sliced langka pieces into the pot
4. Make sure the fruit is soft and tender before turning off the gas
Langka Carnitas
Ingredients:
Boiled slice langka
Oil
Onion
Garlic
Brown sugar
Vegetable stock
Salt
Pepper
Directions:
1. Fry the onion and garlic until slightly brown.
2. Add the sliced langka and continue frying until slightly brown.
3. Sprinkle the brown sugar, salt and pepper, to taste.
4. Pour a cup of the vegetable stock and let it simmer.
5. Serve the langka carnitas with toasted bread.

Langka curry
Ingredients:
Boiled sliced langka
Onion
Bell pepper
Cashew or nuts
Basil
Gata
Calamansi
Patis
Soy sauce
Garlic
Turmeric powder
Directions:
1. Fry the onion and garlic until slightly brown.
2. Add the sliced langka and continue frying.
3. In a separate bowl, pour the gata and add salt, pepper, patis, turmeric powder and calamansi juice.
4. Pour the gata concoction into the frying pan and continue stirring the langka.
5. Add the basil texture and flavor.
6. For spiciness, add the bell pepper and chili powder.
7. Add nuts then serve.

Stir-fried langka
Ingredients:
1. Boiled sliced langka
2. Yoghurt
3. Cumin powder
4. Oil
5. Ginger powder
6. Onion powder
7. Chili powder
8. Calamansi
Directions:
1. Fry the langka and quickly add the ginger, cumin and onion powder.
2. Pour a cup of yoghurt and continue stirring.
3. Add the chili powder and calamansi juice.
