Gourmet tuyo recipes by 'Good News'


In the Philippines, tuyo is classic breakfast fare. Because packs of tuyo can be purchased at supermarkets or sari-sari stores for just P5 to P10, tuyo is often referred to as a “poor man’s dish.”  Tuyo even has its own place in Philippine history and literature.  Historian Ambeth Ocampo wrote in his book “Rizal Without the Overcoat” that tuyo was one of National Hero Jose Rizal’s favorite breakfast foods, along with rice and hot chocolate. Unsurprisingly, tuyo is a favorite pasalubong or takeaway for Filipinos abroad searching for a taste of home.  But while the smell of fried tuyo is a welcome, delectable aroma to some, it can be too strong for others.  According to one account, a Filipina’s neighbors in New York sued her for cooking tuyo because of the smell! In this episode of “Good News,” the “poor man’s dish” gets a gourmet makeover.  For Filipinos around the world,  here are some ideas for preparing tuyo without worrying that your neighbors may hate the smell. Singtulong (Sinigang na tuyo at longganisa) Ingredients 6 pcs Tuyo (scales, bones, heads, and tails removed) 5 pcs Longganisa 1 pc onion chopped 3 pcs tomatoes Vegetables (string beans, camote, radish, etc) Salt and pepper to taste Sinigang mix/kamias Directions: Boil the longganisa then fry. Put onions, tomatoes in the broth where you boiled the longganisa.  Add the vegetables into the broth, then add the tuyo and the fried longganisa.  Add a pinch of salt and pepper to taste. You may opt to use kamias, or a sinigang soup mix for that sour sinigang taste. Tuyo Spread Ingredients 1 Tomato basil leaves 4 cloves of garlic 5 pieces tuyo (scales, bones, head, and tails removed) Cream cheese (half a block) 1 tbsp cooking oil Cayenne pepper Salt and pepper to taste Directions: Mince the tomato, basil leaves, garlic, and tuyo then mix in a bowl. Add the cream cheese and the cayenne pepper. Mash into a paste. Add salt and pepper to taste.  This spread goes perfectly with bread and hash browns. Tuyo Balls Ingredients 5 pcs Tuyo 1 Red Egg 1 Onion Cream Dory Bread 1 cup Flour 1 Egg Directions Mince the tuyo, red egg, onions, cream dory, and bread finely. Combine egg and flour and mix. Add the minced ingredients into the flour and egg mixture and mix well. Add salt and pepper.
