One of the most expensive sea foods is lobster. In the town of Prieto Diaz in Sorsogon, slipper lobster or kupapa as the locals call it, is caught. Some of the favourite dishes are Fried Kupapa with garlic and kupapa adobo. In Sipalay City in Negros Occidental, a must-try is their mud lobster, locally called as uson. They cook it with coconut milk and as omellete.
If you like prawns, you should not miss prawn adobo in mango, and egg prawns. In Pampanga, a common ingredient in sinigang is the local shrimp or locally called as ulang. Ulang is a freshwater shrimp where its head is bigger than the usual shrimp.
Our sea is rich in various seashells. In Samar, the giant shell or sarad that is caught, is almost ten times bigger than a regular mussel which they fondly cooked as adobo. While the abong shells in Batanes is really small but flavourful. There is a soothing feeling once you slurp their abong soup.
