Meatless recipes for Lent
Every year during Lent, devout Catholics celebrate the life and death of Jesus Christ. Aside from praying and visiting churches, it has been their tradition to abstain from eating meat as a personal sacrifice.
Here are some healthy and affordable meatless recipes from 'Pinoy MD,' GMA's weekend health show, which you can serve to your whole family this Holy Week.
Ube Kinampay Soup
Ingredients:
1 tbsp. ginger
1 tbsp. garlic
½ kilo ube kinampay
Bago leaves
Onions
Water
Cooking oil
Directions:
In a pan, sauté the ginger, onions and garlic. Add the sliced ube. Pour water and let it simmer for a few minutes. Add bago leaves. You may also use pechay leaves as an alternative.
Cost: P60 for 4 servings
Pasta Boholana
Ingredients:
1 tbsp. garlic
1 pc. onion
¼ cup mushroom
¼ cup capers
¼ cup olives
¼ cup carrots
3 pcs. okra
1 pack odong noodles
Salt and pepper
Water
Cooking oil
Directions:
Boil noodles for a few minutes or according to the instructions indicated on the pack.
In a separate pan, sauté garlic and onion. Add mushrooms, capers, olives and carrots. You may also use tomatoes as an alternative for capers and olives. Add salt and pepper, depending on your taste.
Lastly, add the okra. Then combine the mixture with the boiled pasta. Sprinkle grated cheese on top.
Cost: P100 for 4 servings
Tuba-marinated Takla (Shrimp)
Ingredients:
1 cup tuba
½ kilo takla (shrimp)
1 pc. onion
1 tbsp. garlic
1 tbsp. ginger
¼ cup butter
Directions:
Marinate the takla in tuba for 15 minutes. Set aside.
In a separate pan, sauté garlic, onion, and ginger in butter. When the garlic turns golden brown, add the marinated takla.
The dish is ready to serve when the takla turns from blackish to red.
Cost: P80 for 4 servings
Sayote Carrot Ensalada
Ingredients:
2 pcs. biasong (local version of lemon)
2 tbsp. honey
1 pc. onion
1 pc. sayote
2 pcs. carrots
Salt and pepper
Cooking oil
Directions:
Combine all the ingredients in a bowl. Mix well then serve.
Cost: P40 for 4 servings
