Unang Hirit's Easy-to-cook Recipes for Leftover Lechon

Lechon is a noche buena holiday staple for many Filipino families. But most of the time, the entire lechon is not consumed in one sitting - therefore leaving enough meat for tomorrow’s paksiw. But are there other dishes you can whip up using leftover lechon?
Wonder no more because GMA-7 morning show “Unang Hirit” provided a number of recipes you can cook using the suckling pig.

Sopas con Lechon
with Chef Brooke Enriquez
Ingredients:
garlic
onions
celery
carrots
lechon (flaked)
lechon buto-buto
red bell pepper
green bell pepper
butter
salt
pepper
pork cubes
evaporated milk
boiled eggs
cabbage/chiffonade
kangkong
lechon skin
elbow pasta
Procedure:
1. Preheat frying pan. Put butter and wait for it to melt.
2. Add onions and garlic.
3. Add celery, carrots, red bell pepper and green bell pepper. Sauté for two to three minutes.
4. Add lechon buto-buto, lechon flakes, and lechon skin. Sauté.
5. Pour water, add cabbage, pork cubes and boil.
6. Cook pasta or noodles and mix with the rest of the ingredients.
8. Garnish with boiled eggs and serve.

Chopseuy Canton con Lechon

Ingredients:
lechon kawali
canton noodles
sayote
baguio beans
carrots
bell pepper
cabbage
cornstarch
water
garlic
onion
soy sauce
fish sauce
oyster sauce
pepper
pork broth
Procedure:
1. Cook lechon kawali. Set aside.
2. Sauté garlic and onion.
3. Add the chopped vegetables.
4. Season with pork broth.
5. Once the vegetables are cooked, add cornstarch and wait for the mixture to thicken.
6. Mix canton noodles and the lechon kawali and simmer for two minutes.

Monggo con Lechon Kawali

Ingredients:
monggo
lechon kawali
garlic
onions
tomato
spinach
water
fish sauce
salt
pepper
cooking oil
Procedure:
1. Put dried monggo, water and salt in a pot. Boil.
2. Remove froth and the excess monggo floating on the surface.
3. Simmer for an hour or until the monggo becomes soft.
4. In a separate pan, saute garlic, onion and tomatoes for two minutes. Mix using the back of the spoon.
5. Add fish sauce and simmer for another two minutes.
6. Add the cooked monggo and simmer
7. Add the lechong kawali.
8. Season to taste.
9. Add spinach and wait for it to dry.
